Carrot and Coriander Soup

Ingredients:

  • 500g carrots (peeled and chopped)
  • 1 litre vegetable stock
  • 25g butter
  • 1 onion sliced
  • 1 tsp ground coriander seed
  • small bunch of fresh coriander chopped
  • salt and pepper to taste
  • Method

    Melt the butter in a large pan.  Add the ground coriander, onion, chopped carrots and cook gently until soft. 

    Add the stock, bring to the boil and simmer for 25 minutes.  Puree with an electric hand blender. 

    Season with salt and pepper, then stir in the chopped fresh coriander leaf.
